Golden Enoki
Scientific Name: Flammulina velutipes (cultivated form F. filiformis)
Golden Enoki produces long, slender stems with small golden-brown caps and a delicate, slightly fruity flavor. It’s a staple in East Asian cuisine—used in soups, hot pots, and salads for its crisp bite and mild sweetness. When grown with light exposure, the caps turn a warm amber hue, distinguishing them from the pale white supermarket variety.
Substrate: Sterilized hardwood sawdust or sawdust-grain blends; can also fruit from supplemented agarwood or rice bran media
Colonization Temp: 70–75°F
Fruiting Temp: 45–55°F
Fruiting Humidity: 90–95%
Light: Low to moderate (controls cap color)
FAE: Low; maintain slight CO₂ buildup for long stems
Notes: Fruiting jars are often capped to limit airflow, producing the characteristic elongated form. Cold-loving species—requires chill conditions for best color and texture.
Cultivation Difficulty: Intermediate
